On phones with more Mega Pixels, is it possible to choose a less Mega Pixels option, or will you be stuck with a "worse" camera?
Its a mix of megapixels and software. Without a good mix of these two, both of them are useless.
By the way im owning pixel 3a Xl, Xiaomi mi note 10 and iPhone 11…and the crappy software of Xiaomi still product's much better pictures in good light conditions than the others.

Bro I am satisfied with your opinion that more megapixels like 48, 64 , 108 are waste or not good. But I want to tell you that Mi redmi note 10 or cc9 pro has still bigger and better sensor and lenses than Iphone 11 / 11pro. If you use pixel binning technology of mi note 10/cc9 pro to capture image at 27MP resolution with 1.6micro meter pixel size than it will surely be better than iphone's 12MP resolution pic with just 1.4micro meter pixel size.
and mi note 10 will further enhance with the use of Google camera application and will outperform iphone.
I am sure because my redmi note 7s can take better low light pictures than my uncle's brand new Iphone 11. (You may see revatlas latest comparison of redmi note 8 and iphone 11 pro primary camera).

Pixel dimensions is key in term of image quality. Smartphones generally use small sized sensors, therefore, despite the improvement of technology, Apple's choice to stick with 12 mp is wise. Giving priority to improving dynamic range and high ISO performance. I would be curious to see an A3 print of a photo taken with one of these 1xx mpx phones. That said, we are still far from the day I'll use a phone as my main camera.

I didn't say that more megepixel means better camera I just said that the larger is the sensor the better image quality we will get and the Samsung HMX 108 camera sensor is one of the biggest camera sensor in mobile phone .
