I think jafar's voice was fine, it kind of adds to the whole generally trustworthy image he has, so even when he loses his temper the sultan's not like you obviously plotting against me

I think the biggest change is that Jasmine isn't a 15 year old girl being fought over by a 17 year old and a middle aged man.
I'm guess I'm the only one that like Jafar in this. He tried something different and it worked for me.
